Celebrate Local Cheese: Cobb Hill

This is our third week of celebrating all things local cheese! We’re highlighting a different maker every week with a grilled cheese special, 10% off their line of cheese, and a tasting with the makers!

This week’s maker is Cobb Hill Cheese in Hartland, VT.

Cobb Hill Cheese has been handcrafting 2 types of farmstead artisan cheese, for 16 years on their farm in Hartland, Vermont. Every batch of cheese is made from fresh milk every other day. Cedar Mountain Farm’s jersey cows provide a rich milk which imparts a delicious, nutty flavor to the cheese. Vermont cheese at its best and only 11 miles away from the market! They make two main cheese varieties, both of which we carry:

Ascutney Mountain:
 An alpine-style natural rind cheese. It was developed from a Swiss Appenzeller recipe. Ascutney Mountain has a sweet nutty flavor and is aged 8 to 9 months.

Four Corners:
a Welsh Caerphilly cheddar recipe. It has a natural rind and is aged 4 to 6 months and has a buttery tangy flavor.
